Cozy Up with a Vegan Bourguignon and Sustainable Gifts

Bonjour!

As the weather turns chilly, we're excited to share a heartwarming vegan Bourguignon recipe. It's a classic French dish, reimagined for a plant-based palate.

Vegan Bourguignon (4person)

  • Ingredients:

    • 1 seitan recipe (see recipe here)
    • 1 tbsp olive oil
    • 1 onion, chopped
    • 6 carrots, sliced
    • 2 celery stalks, chopped
    • 2 cloves garlic, minced
    • 18 liquid ounces (or 1/2 lt) red wine (a full bodied, dry red wine such as cabernet, malbec, or merlot. If for some reason you absolutely must skip it, you can use more vegetable broth in its place. It won’t be as good but it will work).
    • 1 cup or more vegetable broth
    • 1 cups tomato paste
    • 1 bay leaf
    • 1 tsp dried thyme
    • 1/2 tsp black pepper
    • 15 button mushrooms, cut in half 
    • sustainable salt
HOW TO SERVE  VEGAN BOURGUIGNON?
You can serve it on top of any of your favorite grains, pasta, noodles or root vegetable   mash.  However, I personally prefer it over fluffy potato mash because this makes it a truly   comforting winter dish.
 
  • Instructions:

    1. Cook your seitan in a broth for 2 hours.
    2. Drain, keeping the remaining broth aside.
    3. In a pot, heat a little bit of olive oil and saute the chopped onion and the garlic cloves.
    4. Add the seitan and cook on medium or high heat for a few minutes.
    5. Add the carrots, celery and the mushrooms, stir well, and cook another 2 minutes. (and potatoes if you want)
    6. At this point add all the liquid, which should almost cover the seitan and the veggies, but not totally. Put a lid on, bring to a boil, then reduce to low heat and simmer for about 2 hours, stirring once in a while. The stew shouldn't dry out, so add a little broth if needed. Serve over steamed potatoes.
