Vegan Bourguignon Recipe & Sustainable Gift Ideas

As the weather turns chilly, there's nothing quite like a rich, warming stew to bring everyone to the table. This vegan Bourguignon takes a classic French favourite and makes it entirely plant-based — without losing any of the depth or comfort you'd expect from the original.
Vegan Bourguignon (Serves 4)
Ingredients:
- 1 seitan recipe (see recipe here)
- 1 tbsp olive oil
- 1 onion, chopped
- 6 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 18 fl oz (500 ml) full-bodied dry red wine — cabernet, malbec, or merlot all work well. If you need to skip the wine, extra vegetable broth will do the job, though the flavour won't be quite as rich.
- 1 cup (or more) vegetable broth
- 1 cup tomato paste
- 1 bay leaf
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 15 button mushrooms, halved
- Sustainable salt, to taste
Instructions:
- Cook your seitan in broth for 2 hours.
- Drain, setting the remaining broth aside — you'll use it later.
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion and garlic until softened.
- Add the seitan and cook on medium-high heat for a few minutes until lightly browned.
- Stir in the carrots, celery, and mushrooms (and potatoes if you like), and cook for another 2 minutes.
- Pour in all the liquid — it should almost, but not completely, cover the seitan and vegetables. Put a lid on, bring to a boil, then reduce to low heat and simmer for around 2 hours, stirring occasionally. If the stew starts to dry out, add a splash more broth. Serve over your choice of grains, pasta, or mash.
